minus-forty-five:

I made delicious paleo banana & walnut muffins this morning. Low in sugar & calories and super convenient as a snack.

3 large bananas
3 eggs
3 tablespoons melted coconut oil
1/3 cup of coconut flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup toasted walnuts

I just put all of the above into a blender and then poured it into my trays. As I mentioned in an earlier post my mix was a little dry so I added the tiniest bit of almond milk.

They definitely taste better than they look. Suprisingly very soft and fluffy on the inside and quite dense considering there isn’t any white flour.

Will be making them again for sure.
