healthy banana bread recipe 🍌🍞

a few of you have messaged me asking for the recipe so here it is!! i hope you love it!! i did and so did my family who tend to pick the less healthy option when given the chance. there is no added sugar or butter and it tastes great. if you try it out, let me know how it works out for you!! :)

INGREDIENTS:

  • ½ cup of coconut oil, melted 
  • a little less than 2/3 cup of agave nectar (you can use ¾ cup of honey, or a cup of dates instead!)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups of flour (i used all purpose, you can substitute wheat, gluten free, or whichever flour you like!)
  • 1 teaspoon baking soda
  • ½ teaspoon of salt
  • ½ cup of plain greek yogurt 
  • 2 over ripened mashed bananas (the browner the better!)
  • any add ins you like! i used dark chocolate chips!

DIRECTIONS:

  • preheat the oven to 350 degrees fahrenheit  
  • first you will prepare the wet ingredients in a bowl: whisk the coconut oil and agave together.
  • add your eggs and vanilla extract and whisk well.
  • then you will prepare the dry ingredients! in a separate bowl, whisk together the flour, baking soda, and salt.
  • slowly combine the dry ingredients into the wet ingredients and mix! use your hand, not an electric mixer.
  • add the yogurt and the mashed bananas and mix
  • stir in any add ins like chocolate chips, raisins, or nuts
  • spread your mix into a greased loaf pan.
  • i baked mine for just about 57ish minutes (give or take a few). just check on your bake occasionally and try the old knife method and if it comes out clean after being poked into the pan, it’s just about done!!

and that’s basically it! it’s super easy and doesn’t take drastically long to prepare. besides, it will be so worth it when you eat it!! if you have any questions feel free to message me :)
