Nutritious flavorful summer breakfast, fast and easy ๐Ÿณ

Ingredients:
Coconut oil
Arugula (any green will work)
Egg whites
Salsa
Avocado

Put pan on medium high and add about 1 ½ tbs coconut oil to coat the pan.

Add a few handfuls of your washed greens as wanted and cover until they start to wilt for a while. Then flip greens and cover for another minute or two based on desired wilty-ness and doneness.

While the greens cook as it should take a few minutes overall wash and cut into slices half of an avocado. Set aside.

Lower heat to medium low. Spread greens evenly throughout the pan and pour in your egg whites. I use the carton egg whites so I just cover the pan and cover the arugula. Let cook until the egg white on top is almost fully cooked but there are still some uncooked puddles.

Flip it over onto itself to create the omelette. You will see it is nicely done so once you fold it over you just leave it there for about another minute. No need to flip again.

When there is no visible uncooked egg white poking through after folding it, add the salsa to your omelette. Cover and let cook about another minute or until salsa is hot enough.

Plate, add avocado, and enjoy!
