My low-carb Oppsie-Guacamole-Feta Cheese-Sandwich…this is SO GOOD!

For 6 Oopsies combine 3 egg whites and mix them with a pinch of salt till they are stiff. In a separate bowl mix together the 3 egg yolks with 100g of cream cheese and a pinch of baking powder. Finally fold the stiff egg whites into the egg yolk mixture and line a baking tray with parchment paper. Place 6 round Oopsies and bake for 25-35 minutes at 150°C until they are golden brown. Don’t make them too thin and let them cool before removing them from the baking tray because they can be quite soft. After cooling I recommend toasting them for some more crunch :)

I used some fresh guacamole, feta cheese, onions, lettuce and tomatoes for my sandwich, just use your favourite combination! :)
I think they are quite yummy with peanutbutter and bananas as well.
