These apple pie pancakes are gluten free & dairy free. I used Pamela’s flour for these pancakes. It’s extremely tasty and the pancakes were light and fluffy. The apple compote on top is supposed to taste like an apple pie filling and it’s actually a recipe for apple pie filling but without any cornstarch. I used arrowroot instead.

Ingredients for apple pie filling for the topping of pancakes:

2 apples sliced thinly

½ cup of coconut sugar

2-3 tablespoons of arrowroot or cornstarch(depends if you want it more gelified or if you want it to be more of a syrup)

2 tablespoons of lemon juice

1 teaspoon of cinnamon

¼ teaspoon nutmeg

1 cup of water

Ingredients for pancakes:

1 1/3 cup of gluten free flour(Pamela’s)

1 teaspoon of baking powder

½ teaspoon of baking soda

pinch of salt

1 tablespoon of coconut sugar

½ teaspoon apple cider vinegar

2 eggs

1 cup of milk

1 teaspoon vanilla extract

2 tablespoons of grape seed oil

Directions:

Start by making the apple pie filling. In a saucepan put the starch and 1/3 cup of water and whisk until combined. Add cinnamon and nutmeg and sugar. Add lemon juice, chopped apples and 1 cup of water. Bring to a boil and lightly simmer until apples are soft and the mixture is thick. For pancakes combine all the dry ingredients in a big bowl. Combine the wet ingredients in another bowl and whisk until the eggs are beaten. Slowly add wet to dry and whisk until combined. Heat on a griddle or pan. Makes about 12 small pancakes. Plate the pancakes on a plate and drizzle with the apple pie filling and if you want, drizzle maple syrup too. Enjoy :]
