Ok recipe time!
Mainly for @peachfly but also anyone else who wants it!
Bear in mind that I made this up on the spot/as I went along, and could probably be altered however you want it to be (or if you just don’t have the right ingredients).
Ingredients I used:Bulk foods:
Diced fresh Chicken (coconut oil cooking spray to fry)
Broccoli
Green beans
Mushrooms
Red bell pepper
Courgette/zucchini
Kale
Wholewheat noodlesFlavour foods:
Half a red onion (diced)
One garlic clove (chopped small)
Knob of fresh ginger (peeled and chopped small)
Half a green chilliSpices/sauce ingredients:
Chicken stock (only a very small amount - like a ¼ pint)
Soy sauce (a tiny dash)
Half a tablespoon of light tahini
Half a teaspoon of smooth 100%peanut butter
One teaspoon of raw organic honey
A squeeze of lemon juice
Chilli powder (tiny amount)
Turmeric powder (tiny)
Ginger powder (tiny)
Garlic powder (tiny)
Ground black pepper (as much as you want)Ok so start by boiling the broccoli, green beans and courgettes together to make sure they are thoroughly cooked when serving.
In a frying pan/wok/whatever you have, fry together the chicken, onions and garlic (I did this in coconut oil cooking spray) if it starts to dry out add a tiny bit of stock.
Then add the ginger to the pan and throw in the mushrooms, red peppers and chilli.
Drain any excess water off the boiled greens and add them to the pan and stir fry them all together, adding a little bit of stock every now and then.
Put in the soy sauce, tahini and peanut butter, honey and of all the spices, if it’s too thick add more stock and if it’s too watery add some wholewheat flour.
Boil the wholewheat noodles until they’re cooked and drain them thoroughly, stir them into the mix and season with fresh lemon juice and black pepper!
